Simply amazing, these knives truly are works of art. When I first purchased them 3 months ago, I stocked up on produce and dismantled piles of vegetables. I made salsa after salsa just to use them. They have required no sharpening and minimal honing to maintain their surgical cutting edge. If you have the means, I highly recommend giving them a try.
We have been using the 8 piece set for one week of heavy holiday cooking. Great all around knives. The bolster does promote the use of the “pinch” method of holding the knives. When you pinch the bolster, the knives are well balanced and will go through all vegetables effortlessly. The curve of the handles do rest better in your hands with a pinch hold which results in no “knuckles banging” the cutting board.
